The Native Series is a range of wild fermented beers showcasing the flavours of locally foraged wild yeast to produce a unique flavour of Cornwall.

The undeniable distinction of these beers is their yeast characteristic. All of these beers are fermented with a unique mixed culture of wild yeast foraged from Cornwall and West Devon, with each beer release having its own unique and diverse mixture of wild yeast and bacteria, giving each beer its own identity rooted in both time and place. This uniqueness means that these beers will taste like no other and could never be replicated exactly, even by us! Bottled with a living culture, these beers will also continue to develop further nuanced flavours and aromas adding to their uniqueness in time.

 

Pomme
3.5% ABV - Wild Table Beer
750ml Bottle
Our first release in the Native Series, Pomme is a light and delicate table beer fermented using the naturally occurring wild yeast on spent Fowey Valley cider apples. Fermented on the pomace for 1 month before undergoing 10 months of ageing in a French Oak ex-white wine barrel and 4 weeks of bottle conditioning.

A single barrel, unblended beer with lightly floral notes finishing crisp and dry.

 

Nearly Home
6.1% ABV - Wild Red Ale

375ml Bottle
Named after the infamous trees marking the gateway to Cornwall, this wild red ale has notes of raisin and stone fruits underpinned by a balanced sourness and light umami flavours.

Fermented using a wild culture of yeast and bacteria propagated from the bark of the Nearly Home Trees and barrel aged for 7 months.

Part of the Castle Brewery Native Series brewed in collaboration with Driftwood Spars Brewery.

 

Gorse
6.8% ABV - Wild Golden Ale
375ml Bottle
A sour wild golden ale fermented using a mixed culture foraged from Cornish moorland gorse flowers. Barrel aged for 10 months to develop a complex dry flavour with fruity lactic sourness. A single barrel, unblended beer with a limited run of 532 bottles.
